Clay, pumpkins, snow, cactus, etc… it’s all there. For reference, the pumpkins are on a small island directly west of the place you spawn. Make the short swim and you’ll see them.

Look in the deserts and you will find clay. I have only searched one desert and I have found 9 stacks of 64 clay balls.  I hope this helps the people searching for clay in grassy jungles:)
